Sodium benzoate (chemical formula :C6H5CO2Na), E code E211, is a sodium salt of benzoic acid. Sodium benzoate is an acidic preservative with good anti-corrosion effect in an acidic environment. Sodium benzoate is mostly white particles, odorless or microstrip benzoin odor, taste slightly sweet, convergence; Soluble in water (room temperature) about 53.0g/100ml, PH is about 8; Sodium benzoate is also an acidic preservative, which has no bactericidal and bacteriostatic effect in alkaline medium. The optimal PH for corrosion protection is 2.5-4.0, and the bactericidal effect of 5% solution is not very good at PH5.0. Sodium benzoate is lipophilic, easily penetrates the cell membrane into the cell body, interferes with the permeability of the cell membrane, and inhibits the absorption of amino acids by the cell membrane; It enters the cell body to ionize and acidify the alkali storage in the cell, inhibits the activity of the respiratory enzyme system of the cell, and prevents the condensation reaction of acetyl-CoA, so as to play the purpose of food preservation.
