4.Properties: decahydrate is colorless or white crystal or white crystalline powder, and anhydrous substance is white powder. Soluble in water, aqueous solution is alkaline, insoluble in ethanol and other organic solvents. It has strong complexation ability with Cu2+, Fe3+, Mn2+ and other metal ions.

5.Uses: in the food industry as food quality improver, PH regulator, metal ion chelating agent, emulsifying dispersant, adhesive and so on. Used in meat and aquatic processing, can improve water retention, make meat fresh and tender, stabilize natural pigments, prevent fat corruption, in addition, also used in yeast, cheese manufacturing
